Put the already-cut vegetables such as onion, corn, cottage cheese, spinach, and grated carrot in the pan. Put the lid over the pan and steam these vegetables a little only. You can put as many veggies as you may wish.

In the meanwhile, toast the slices of bread and layer them with the hung curd or homemade mayonnaise. Put the layer of steamed veggies on the bread and enjoy the breakfast.

3. Sprouted Lentils

This breakfast is one of my favorites. It is super easy and super healthy too. Sprouting increases the amounts of vitamins and minerals in the lentils, especially B vitamins and carotene.

They are also a rich source of vitamin E. Sprouting produces vitamin C also.

Put a little oil in the cooker and let it heat and put cumin, mustard seeds, curry leaves in the oil for tempering. Put the already sprouted lentils in the cooker and put a little amount of water in it. Cook lentils for 2-3 min.

Once your lentils are semi-cooked, put chopped onion, cucumber, tomatoes, green chilies, and pomegranate. Add lemon juice to it and mix everything well. Relish this tasty and healthy breakfast.

  1. Veggie and Hummus Sandwich

This is a perfect heart-healthy lunch as it is loaded with fibers. It is also very time-saving as it takes only 10 minutes to prepare this recipe.

Take 2 slices of whole wheat bread, spread 1 slice with hummus and the other one with mashed avocado. Fill the sandwich with bell pepper, cucumber, carrot, and other veggies of your choice.

2. Steamed Rice Cake (Idli)

The best part about steamed rice cake (idli) is that it is a fermented food. It is a good source of protein, calories, and vitamins, especially B vitamins. It is prepared with a batter of fermented lentils and rice.

These days idli batters are easily available in the market or you can choose to prepare the batter at home as well. You can also choose to add vegetables to the batter to make it much tastier.

Steamed rice cake (idli) can be enjoyed with coconut chutney or cooked lentils.

3. Avocado and Tomato Salad with Grilled Chicken

In a large bowl, combine the diced avocado, halved cherry tomatoes, and diced grilled chicken. Add the mixed salad greens (eg., spinach, arugula, or lettuce) with avocado, tomatoes, and chicken to the bowl.

In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, Dijon mustard, salt, and pepper to create the dressing.

Put the dressing over the salad and toss everything together and this is ready to serve.
